• Superficie : Sélection issue de 4,9 hectares.

• Production moyenne : 11 000 bouteilles.

• Climats : Assemblage de tous les secteurs des « Longeroies » (Dessus et Bas, Cave aux Loups, Cabane aux Chiens,…).

• Terroirs : Sur un coteau moyennement pentu, qui commence en exposition plein Est (chaud), et se termine quasiment plein Sud (mais venteux).  Les sols sont assez divers : Oolithes Blanches, Calcaire de Prémeaux (avec les fameuses Chailles), Marnes Saumon, Cailloutis de Cône ou sables Alluvionnaires…  

• Cépage : 100% Pinot Noir, plantés entre 1930 et 1990.

• Culture : Agriculture Biologique. Les plus vieilles vignes sont labourées au cheval, et le travail y est manuel, sans tracteur.

• Vendange : Manuelle en petites caisses de 15 kg, avec tri en cuverie. • Vinification et élevage : Encuvage avec 50% de raisins entiers, pigeages et remontages modérés, fermentation spontanée en levures indigènes.  Élevage en tonneaux de 600 et 228 litres (environ 25% de bois neuf) pendant 12 mois. Les vins sont ensuite assemblés pour être de nouveau entonnés et vieillis 6 mois en demi-muids. 

 

Depuis plusieurs siècles, nous possédons de belles parcelles dans « Les Longeroies ».  Aujourd’hui encore, ils ont une place spéciale au Domaine.
