Domaine du Roc des Boutires sources 30-year-old Chardonnay from Leynes west of Pouilly and Blanot between Cruzilles and Péronne, both high-altitude cool sites on clayey Jurassic limestone planted at 10,000 vines per hectare using sustainable practices. The 2022 vintage's intense heat was mitigated by vigorous leaf canopy, with 60 hand-pickers harvesting August 24-September 3 in 30-liter bins at 54 hl/ha. Whole-cluster pressed by gravity, cold-settled at 8°C, slow-fermented one month, then six-month malolactic before eight months in 95% steel and 5% oak delivers a rounded Chardonnay with green apple, lemon curd, and wet stone showing Mâconnais depth with northern Burgundy freshness.
